Avocado and Basil Pesto Bruschetta

Sourdough bread, sliced
2 tbsp extra virgin olive oil
1 avocado
Salt + pepper
1 small red chilli, seeded + chopped
Handful fresh coriander
Tideford Organics Basil Pesto (or another vegan pesto)
Preparation

Brush slices of the bread with a little extra virgin olive oil and toast lightly.
In a bowl, mash up the avocado with a little salt + pepper and mix in some of the chilli.
Spread the avocado mixture onto the toasted bread and top with a generous spoonful of the pesto.
Garnish with the rest of the chilli and the coriander leaves.
