Single Serve Protein Oatmeal Cookie

1/2 cup (45g) rolled oats
1 tsp (5g) peanut flour or nut flour of choice
1 tbsp (15g) Peanut butter or nut butter of choice
1 square (10g) dark chocolate chopped
Pinch of cinnamon (optional)
Coconut oil for greasing your ramekin
1/4 cup (60g) ripe mashed banana; approximately half a small banana
1 tsp (5g) Pulsin rice protein (or other protein, optional)
1 tbsp (15ml) unsweetened almond milk or non-dairy milk of choice
1/4 tsp baking powder
1/4 tsp vanilla extract or vanilla powder (optional)
Preparation

Mix together all ingredients in a bowl.
Grease a 4-5 inch ramekin with coconut oil.
Place mixture into the ramekin and spread evenly with the back of teaspoon packing it down.
Cook in the microwave on high for 1.5 – 2 minutes – less time for a softer cookie!
