Cauliflower, Red Onion, Sweet Potato, Kale, Sesame Seed and Sweetcorn Fritters

Ingredients

  • Ingredients ½ head cauliflower 1 red onion 3 sweet potatoes 2 chilli 1 tsp sesame seeds 60 gr sweetcorn Handful of kale

Preparation

  • Preparation Serves 6 Method Microwave sweet potatoes until soft. Allow to cool and peel, set aside. Add the remaining ingredients to a food processor and pulse until finely chopped. Mix together with the sweet potato and form into fritters. Lightly fry until golden brown and transfer to a baking tray. Put in the oven on 180 degrees Celsius for 15-20 minutes. Serve with a big dollop of hummus and vegetables.
