Quinoa Coconut and Coriander Salad
Ingredients
- Ingredients 1 cup Cooked Quinoa (cook quinoa in vegetable stock for more flavor) 1 grated carrot 1 stalk finely chopped celery 10 almonds chopped and roasted Shredded coconut Handful (1/3 cup) chopped coriander Vinaigrette: 60ml lemon juice 30ml water 60ml olive oil 2 tsp white vinegar 1 clove crushed garlic Oreganum, salt and pepper to taste.
Preparation
- Method Cook the quinoa. Mix ingredients together to make up a salad!
