Very Berry Muffins

Ingredients

  • Ingredients 320g all-purpose flour 1 tbsp baking powder 2 tsp bicarbonate of soda (baking soda in US) 1 pinch of salt 200 g plant-based yoghurt (free from sugars) 150g caster sugar (or 6 tbsp stevia) 200 ml Provamel Organic Soya Drink Unsweetened 6 tbsp groundnut oil 1 tbsp vanilla extract 150g of blueberries

Preparation

  • Method Preheat the oven to 200°C. Mix all the dry ingredients. Beat the wet ingredients and mix with the dry ones until you have a lumpy mass. Add the blueberries. Ladle in the muffin tins (+/- 10 pieces) and bake for 25 minutes.
