Apple and Spring Onion Salad
Ingredients
- Ingredients 3 apples (not too sweet) 1 bunch spring onions (6-7) 3/4 cup soya yoghurt (full fat) 1 teaspoon lemon juice 1/2 tablespoon agave syrup (less if the yoghurt is sweetened) Salt, pepper ½ cup roasted and salted peanuts
Preparation
- Method Wash the apples, remove the core and cut them lengthwise in fineĀ slices. Drizzle with a little lemon juice and mix in a bowl. Top andĀ tail the spring onions, wash them and cut into very fine slices. MixĀ apples and onions in a salad bowl. Mix yoghurt with agave syrup,Ā salt and pepper, pour over the apple and onion mix and mix well. Sprinkle with peanuts before serving. Guten Appetit!
