Beetroot and Pistachio Salad

  • Ingredients 1 cooked beetroot 4 cherry tomatoes ½ yellow pepper Handful of pistachios Mixed salad leaves Juice of half a lemon Drizzle of sesame oil

Preparation

  • Preparation  Serves 1 Method Slice beetroot and pepper, toss with tomatoes and salad leaves. Squeeze over half a lemon and a good drizzle of sesame oil and sprinkle with pistachios.
